  • 2 large sweet potatoes peeled and diced
  • 1 cup milk
  • 6 eggs beaten
  • 1 cup cheddar cheese shredded
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the diced sweet potatoes, olive oil, salt, and pepper. Toss to coat.
  3. Spread the sweet potatoes evenly in a baking dish. Bake for 20 minutes or until tender.
  4. In the same mixing bowl, whisk together the eggs and milk. Pour over the baked sweet potatoes.
  5. Sprinkle the shredded cheddar cheese on top.
  6. Bake for an additional 25 minutes or until the eggs are set and the cheese is melted and bubbly.
  7. Let cool for a few minutes before serving. Enjoy!
