Main Ingredients
- 2 large Sweet Potatoes peeled and diced
- 1 cup Spinach fresh
- 1 cup Cheese shredded
- 6 Eggs
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Preheat your oven to 375°F (190°C).
In a large bowl, whisk the eggs, then add salt and pepper.
Add the diced sweet potatoes, spinach, and cheese to the bowl and mix well.
Pour the mixture into a greased baking dish.
Bake for 45 minutes or until the top is golden and the center is set.
