Overnight Blueberry French Toast Casserole

This is a delicious and easy breakfast casserole that you can prepare the night before and bake in the morning.

Ingredients 

Main Ingredients

  • 1 loaf French bread cut into cubes
  • 2 cups Blueberries fresh or frozen
  • 8 Eggs
  • 2 cups Milk
  • ½ cup Heavy cream
  • 1 teaspoon Vanilla extract
  • ½ cup Maple syrup
  • ¼ teaspoon Salt

Instructions 

  1. 1. Grease a 9x13 inch baking dish. Place half of the bread cubes in the dish, and top with blueberries. Layer the remaining bread cubes over the blueberries.
  2. 2. In a large bowl, whisk together eggs, milk, heavy cream, vanilla extract, maple syrup, and salt. Pour over the bread cubes, making sure all are covered evenly with the milk-egg mixture. Cover with foil and refrigerate overnight.
  3. 3. Preheat oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature for 30 minutes.
  4. 4. Bake, covered, for 30 minutes. Remove foil, and continue baking for another 15 minutes, until the top is browned and the center is set.
  5. 5. Let cool for 10 minutes before serving. Enjoy!
