Ingredients 

Pancake Batter

  • 1 cup Oatmeal
  • 1 cup Buttermilk
  • 1 cup All-purpose flour
  • 2 tablespoons Sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 2 Eggs beaten
  • ¼ cup Butter melted

Instructions 

  1. In a mixing bowl, combine the oatmeal and buttermilk. Let it sit for 5 minutes.
  2. In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the beaten eggs and melted butter to the oatmeal mixture. Mix well.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Heat a griddle or skillet over medium heat. Grease lightly with butter or oil.
  6. Pour ¼ cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with your favorite toppings.
