Zucchini Pancakes Recipe

Main Ingredients
- 2 cups grated zucchini
- 1 cup all-purpose flour
- 2 large eggs
- ½ cup grated Parmesan cheese
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoon olive oil for frying
Grate the zucchini and squeeze out excess moisture.
In a mixing bowl, combine grated zucchini, flour, eggs, Parmesan cheese, baking powder, salt, and black pepper. Mix well.
Heat olive oil in a frying pan over medium heat.
Scoop ¼ cup of batter for each pancake into the pan. Flatten slightly and cook until golden brown on both sides, about 3-4 minutes per side.
Serve warm with your favorite toppings.
