Ingredients 

Main Ingredients

  • 8 pieces rice paper wrappers
  • 1 cup cooked shrimp, sliced in half lengthwise
  • 1 cup cooked vermicelli noodles
  • 1 cup shredded lettuce
  • ½ cup fresh mint leaves
  • ½ cup fresh cilantro leaves
  • ½ cup fresh Thai basil leaves
  • ½ cup shredded carrots
  • ½ cup sliced cucumber

Instructions 

  1. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds to soften.
  2. Lay the softened wrapper flat on a clean surface.
  3. Place a small amount of shrimp, vermicelli noodles, lettuce, mint, cilantro, basil, carrots, and cucumber in the center of the wrapper.
  4. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top.
  5. Repeat with the remaining wrappers and fillings.
  6. Serve immediately with your favorite dipping sauce.
