Main Ingredients
- 2 large Avocados ripe
- 1 cup Fresh Basil Leaves
- ¼ cup Pine Nuts toasted
- 2 cloves Garlic minced
- ½ cup Olive Oil
- ¼ cup Parmesan Cheese grated
- 1 tablespoon Lemon Juice freshly squeezed
- to taste Salt
- to taste Black Pepper freshly ground
1. Cut the avocados in half, remove the pit, and scoop the flesh into a blender.
2. Add the basil leaves, toasted pine nuts, minced garlic, olive oil, grated Parmesan cheese, and lemon juice to the blender.
3. Blend until smooth and creamy. If the mixture is too thick, add a bit more olive oil.
4. Season with salt and freshly ground black pepper to taste.
5. Serve immediately or store in an airtight container in the refrigerator for up to 2 days.
