- 2 eggs
- 1 cup spinach fresh
- 1 bell pepper chopped
- ¼ cup onion chopped
- 1 tablespoon olive oil
- to taste salt and pepper
Heat olive oil in a skillet over medium heat.
Add chopped onion and bell pepper, cook until softened.
Add spinach and cook until wilted.
Make two wells in the veggie mixture and crack an egg into each well.
Cover the skillet and cook until eggs are set to your liking.
Season with salt and pepper to taste. Serve immediately.
