  • 1 lb Chicken, Turkey, or Pork cut into bite-sized pieces
  • 2 cups Carrots sliced
  • 2 cups Celery sliced
  • 1 cup Onion chopped
  • 4 cups Chicken Broth
  • 2 cups Potatoes diced
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Parsley

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the meat and cook until browned.
  2. 2. Add the carrots, celery, and onion. Cook until the vegetables are softened.
  3. 3. Pour in the chicken broth and bring to a boil.
  4. 4. Add the potatoes, salt, pepper, thyme, and parsley. Reduce heat and simmer for about 30 minutes, or until the potatoes are tender.
  5. 5. Taste and adjust seasoning if needed. Serve hot.
