Vegan Tofu Scramble Breakfast Sandwiches
A delicious and hearty vegan breakfast sandwich made with scrambled tofu.

Main Ingredients
- 1 block firm tofu drained and crumbled
- 1 tablespoon olive oil
- 1 teaspoon turmeric
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 4 slices whole grain bread toasted
- 1 cup spinach fresh
- 1 pinch salt to taste
- 1 pinch black pepper to taste
Heat olive oil in a skillet over medium heat.
Add crumbled tofu, turmeric, garlic powder, and onion powder. Cook for 5-7 minutes, stirring occasionally.
Season with salt and black pepper to taste.
Toast the bread slices.
Assemble the sandwiches by placing a portion of tofu scramble and fresh spinach between two slices of toasted bread.
