Ingredients

  • 1 block firm tofu drained and crumbled
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 slices whole grain bread toasted
  • 1 cup spinach fresh
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add crumbled tofu, turmeric, garlic powder, and onion powder. Cook for 5-7 minutes, stirring occasionally.
  3. Season with salt and black pepper to taste.
  4. Toast the bread slices.
  5. Assemble the sandwiches by placing a portion of tofu scramble and fresh spinach between two slices of toasted bread.
