Vegan Pancakes Recipe

Pancake Batter
- 1 cup All-purpose flour
- 2 tablespoons Sugar
- 1 tablespoon Baking powder
- ⅛ teaspoon Salt
- 1 cup Almond milk
- 1 tablespoon Apple cider vinegar
- 1 teaspoon Vanilla extract
- 2 tablespoons Vegetable oil
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, mix the almond milk and apple cider vinegar. Let it sit for a minute to curdle.
Add the vanilla extract and vegetable oil to the almond milk mixture.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Heat a non-stick pan over medium heat. Pour ¼ cup of batter onto the pan for each pancake.
Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Serve warm with your favorite toppings.
