Main Ingredients
- 1 tablespoon Olive Oil
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 medium Bell Pepper, diced
- 1 can Diced Tomatoes (14.5 oz)
- 1 can Kidney Beans, drained and rinsed (15 oz)
- 1 can Black Beans, drained and rinsed (15 oz)
- 2 tablespoon Chili Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Paprika
- 1 cup Vegetable Broth
- to taste Salt and Pepper
Heat the olive oil in a large pot over medium heat.
Add the diced onion and cook until softened, about 5 minutes.
Add the minced garlic and diced bell pepper, and cook for another 3-4 minutes.
Stir in the diced tomatoes, kidney beans, black beans, chili powder, cumin, and paprika.
Pour in the vegetable broth and bring the mixture to a simmer.
Reduce the heat to low and let it simmer for 20 minutes, stirring occasionally.
Season with salt and pepper to taste before serving.
