Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 medium Bell Pepper, diced
  • 1 can Diced Tomatoes (14.5 oz)
  • 1 can Kidney Beans, drained and rinsed (15 oz)
  • 1 can Black Beans, drained and rinsed (15 oz)
  • 2 tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 cup Vegetable Broth
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and diced bell pepper, and cook for another 3-4 minutes.
  4. Stir in the diced tomatoes, kidney beans, black beans, chili powder, cumin, and paprika.
  5. Pour in the vegetable broth and bring the mixture to a simmer.
  6. Reduce the heat to low and let it simmer for 20 minutes, stirring occasionally.
  7. Season with salt and pepper to taste before serving.
