Ingredients

  • 4 Eggs
  • 1 cup Greek yogurt
  • 2 cloves Garlic minced
  • 2 tablespoon Butter
  • 1 teaspoon Paprika
  • 1 teaspoon Dried mint
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. In a mixing bowl, combine the Greek yogurt and minced garlic. Set aside.
  2. 2. In a saucepan, melt the butter over medium heat. Add the paprika and dried mint, and cook for 1-2 minutes until fragrant. Remove from heat and set aside.
  3. 3. Fill another saucepan with water and bring it to a gentle simmer. Add a splash of vinegar if desired. Crack the eggs into the simmering water and poach for 3-4 minutes until the whites are set but the yolks are still runny.
  4. 4. To serve, spread the garlic yogurt on a plate. Place the poached eggs on top, then drizzle with the paprika butter. Season with salt and black pepper to taste.
