Spinach and Courgette Quiche
A delicious and healthy quiche made with spinach and courgette, perfect for any meal.

Main Ingredients
- 1 sheet Shortcrust Pastry
- 200 g Spinach fresh
- 1 medium Courgette sliced
- 3 Eggs beaten
- 200 ml Milk
- 100 g Cheese grated
- to taste Salt
- to taste Pepper
Preheat the oven to 180°C (350°F).
Line a quiche pan with the shortcrust pastry and trim the edges.
Blanch the spinach in boiling water for 2 minutes, then drain and squeeze out excess water.
In a mixing bowl, whisk together the eggs and milk. Season with salt and pepper.
Spread the spinach and sliced courgette evenly over the pastry base.
Pour the egg mixture over the vegetables and sprinkle with grated cheese.
Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
Let the quiche cool slightly before serving.
