Ingredients

  • 1 cup spelt flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoon melted butter

Instructions 

  1. In a mixing bowl, whisk together the spelt flour, sugar, baking powder, and salt.
  2. In another bowl, beat the egg and then add the milk and melted butter. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a frying pan over medium heat and lightly grease it. Pour ¼ cup of batter onto the pan for each pancake.
  5. Cook until bubbles form on the surface of the pancake and the edges look set, then flip and cook until golden brown on the other side.
  6. Repeat with the remaining batter. Serve warm with your favorite toppings.
