- 4 large eggs
- 0.5 cup diced Spanish chorizo
- 0.5 cup diced tomatoes
- 0.25 cup chopped onions
- 1 tablespoon olive oil
- Salt and pepper to taste
Heat olive oil in a pan over medium heat.
Add chorizo and onions, cook until onions are translucent.
Add tomatoes, cook for another 2 minutes.
