- 2 cups Cooked corned beef, diced
- 2 cups Cooked potatoes, diced
- 1 Onion, chopped
- 2 tablespoon Butter
- 4 Eggs
- to taste Salt and pepper
1. Heat butter in a skillet over medium heat.
2. Add chopped onion and cook until translucent.
3. Add diced corned beef and potatoes to the skillet. Cook until browned and crispy.
4. Make four wells in the hash and crack an egg into each well.
5. Cover the skillet and cook until eggs are done to your liking.
6. Season with salt and pepper to taste. Serve hot.
