Ingredients 

Root Vegetables

  • 2 cups Carrots peeled and chopped
  • 2 cups Parsnips peeled and chopped
  • 2 cups Sweet Potatoes peeled and chopped
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground
  • 1 teaspoon Rosemary chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine all the chopped vegetables.
  3. Drizzle with olive oil, then sprinkle with salt, pepper, and rosemary. Toss to coat evenly.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 35-40 minutes, or until the vegetables are tender and golden brown, stirring halfway through.
