Ingredients 

Pancake Ingredients

  • 1 cup Ricotta Cheese
  • 1 cup All-purpose Flour
  • ¼ cup Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ¼ teaspoon Salt
  • 1 cup Milk
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 2 tablespoon Butter (melted)

Instructions 

  1. In a large mixing bowl, whisk together the ricotta cheese, milk, eggs, and vanilla extract until smooth.
  2. In another bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  4. Fold in the melted butter.
  5. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  6. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with your favorite toppings.
