Ingredients

  • 2 cups All-purpose flour
  • 1 cup Rolled oats
  • ½ cup Brown sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • ½ teaspoon Ground nutmeg
  • ½ cup Cold butter, cubed
  • 1 cup Pumpkin puree
  • 1 large Egg
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, oats, brown sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the pumpkin puree, egg, and vanilla extract.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Turn the dough out onto a floured surface and shape into a circle about 1 inch thick. Cut into 8 wedges and place on the prepared baking sheet.
  7. Bake for 18-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow to cool slightly before serving. Enjoy!
