Potato Crust Quiche
A delicious quiche with a crispy potato crust.

Crust
- 3 cups Shredded Potatoes squeezed dry
- 1 teaspoon Salt
- 1 tablespoon Olive Oil
Filling
- 4 Eggs beaten
- 1 cup Milk
- 1 cup Cheddar Cheese shredded
- 1 cup Spinach chopped
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Preheat oven to 400°F (200°C).
Press shredded potatoes into a pie dish to form a crust. Drizzle with olive oil and sprinkle with salt. Bake for 20 minutes.
In a mixing bowl, combine beaten eggs, milk, cheese, spinach, salt, and pepper.
Pour the egg mixture into the potato crust. Bake for 20 minutes or until the filling is set.
