Ingredients 

Crust

  • 3 cups Shredded Potatoes squeezed dry
  • 1 teaspoon Salt
  • 1 tablespoon Olive Oil

Filling

  • 4 Eggs beaten
  • 1 cup Milk
  • 1 cup Cheddar Cheese shredded
  • 1 cup Spinach chopped
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Press shredded potatoes into a pie dish to form a crust. Drizzle with olive oil and sprinkle with salt. Bake for 20 minutes.
  3. In a mixing bowl, combine beaten eggs, milk, cheese, spinach, salt, and pepper.
  4. Pour the egg mixture into the potato crust. Bake for 20 minutes or until the filling is set.
