Ingredients

  • 4 slices Bacon cooked and crumbled
  • 2 cups Diced potatoes
  • ½ cup Diced onion
  • 1 cup Shredded cheese
  • 6 large Eggs
  • ½ cup Milk
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cook bacon in a skillet until crispy. Remove and crumble.
  3. In the same skillet, cook potatoes and onions until tender.
  4. In a bowl, whisk eggs, milk, salt, and pepper.
  5. In a greased baking dish, layer potatoes, onions, bacon, and cheese.
  6. Pour egg mixture over the top.
  7. Bake for 35 minutes or until set.
