Instructions
Preheat oven to 375°F (190°C).
Cook bacon in a skillet until crispy. Remove and crumble.
In the same skillet, cook potatoes and onions until tender.
In a bowl, whisk eggs, milk, salt, and pepper.
In a greased baking dish, layer potatoes, onions, bacon, and cheese.
Pour egg mixture over the top.
Bake for 35 minutes or until set.
