Ingredients 

Pancake Batter

  • 1 cup Oatmeal ground into flour
  • 1 cup Wheat Flour
  • 1 cup Milk
  • 1 large Egg
  • 1 tablespoon Baking Powder
  • 1 tablespoon Sugar
  • 1 cup Blueberries fresh or frozen
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt

Instructions 

  1. In a mixing bowl, combine the oatmeal flour, wheat flour, baking powder, sugar, and salt.
  2. In another bowl, whisk together the milk, egg, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Gently fold in the blueberries.
  5. Heat a griddle or skillet over medium heat and lightly grease it.
  6. Pour ¼ cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with your favorite toppings.
