Ingredients

  • 1 cup rolled oats
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup sugar
  • 1 large egg
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup blueberries fresh or frozen

Instructions 

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, combine the oats and milk. Let sit for 10 minutes.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat the egg and sugar until light and fluffy. Add the oil and vanilla extract, and mix well.
  5. Stir the oat mixture into the egg mixture. Add the dry ingredients and mix until just combined. Fold in the blueberries.
  6. Divide the batter evenly among the muffin cups. Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
