Ingredients

  • 6 large eggs
  • ½ cup milk
  • ½ cup shredded cheese cheddar or your choice
  • ¼ cup diced bell pepper
  • ¼ cup diced onion
  • ¼ cup spinach chopped
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs and milk.
  3. Add the cheese, bell pepper, onion, spinach, salt, and pepper to the egg mixture. Stir to combine.
  4. Pour the mixture evenly into a greased muffin tin.
  5. Bake for 20 minutes, or until the frittatas are set and lightly golden.
  6. Let them cool for a few minutes before removing from the tin. Serve warm.
