Ingredients

  • 1 lb Ground beef
  • 1 cup Shredded cheese
  • 1 cup Enchilada sauce
  • 8 Tortillas
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. Cook the ground beef in a microwave-safe dish until browned. Drain excess fat.
  2. 2. Mix the cooked beef with half of the enchilada sauce, salt, and pepper in a mixing bowl.
  3. 3. Fill each tortilla with the beef mixture and roll them up. Place them seam-side down in the microwave-safe dish.
  4. 4. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  5. 5. Microwave on high for 5-7 minutes, or until the cheese is melted and bubbly.
  6. 6. Let it cool for a few minutes before serving.
