Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 can crushed tomatoes 400g
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • 4 eggs
  • ¼ cup fresh cilantro, chopped
  • 1 avocado, sliced for serving

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced onion and bell pepper. Cook until softened, about 5 minutes.
  3. Stir in minced garlic, ground cumin, ground coriander, and smoked paprika. Cook for another minute.
  4. Add crushed tomatoes, salt, and black pepper. Simmer for 10 minutes.
  5. Make small wells in the sauce and crack an egg into each well. Cover the skillet and cook until eggs are set, about 5 minutes.
  6. Garnish with fresh cilantro and serve with sliced avocado.
