  • 2 cups mashed sweet potatoes
  • 1 cup all-purpose flour
  • 2 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoon butter melted

Instructions 

  1. In a mixing bowl, combine the mashed sweet potatoes, flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the milk, eggs, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a skillet over medium heat and lightly grease with butter or oil.
  5. Scoop ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
