  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese cheddar or your choice
  • 1 large egg
  • ¼ cup flour
  • ¼ cup chopped green onions
  • to taste salt and pepper
  • 2 tablespoon oil for frying

Instructions 

  1. In a mixing bowl, combine mashed potatoes, cheese, egg, flour, green onions, salt, and pepper.
  2. Heat oil in a frying pan over medium heat.
  3. Scoop about ¼ cup of the mixture and form into a patty. Place in the hot pan.
  4. Cook for 3-4 minutes on each side until golden brown. Repeat with remaining mixture.
  5. Serve hot with sour cream or your favorite dipping sauce.
