Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • ½ cup honey
  • ½ cup peanut butter
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 eggs large
  • 1 cup dried fruit e.g., raisins, cranberries
  • ½ cup nuts chopped, e.g., almonds, walnuts

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, whole wheat flour, baking powder, and salt.
  3. In another bowl, whisk together the honey, peanut butter, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the dried fruit and nuts.
  5. Drop large spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 15-20 minutes, or until the cookies are golden brown around the edges. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
