Irish Boxty Recipe
A traditional Irish potato pancake, crispy on the outside and soft on the inside.

Main Ingredients
- 2 cups grated raw potatoes
- 1 cup mashed potatoes
- 1 cup all-purpose flour
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon salt
- to taste black pepper
- 2 tablespoon butter for frying
1. Grate the raw potatoes and squeeze out excess moisture.
2. In a mixing bowl, combine grated potatoes, mashed potatoes, flour, buttermilk, baking soda, salt, and pepper.
3. Heat a frying pan over medium heat and add butter.
4. Drop large spoonfuls of the potato mixture into the pan, flattening them into pancakes.
5. Cook until golden brown on both sides, about 3-4 minutes per side.
6. Serve hot with your favorite toppings.
