Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 cups Pasta any type
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Garam Masala
  • 1 can Diced Tomatoes
  • 2 cups Vegetable Broth
  • to taste Salt
  • to taste Black Pepper
  • 1 handful Cilantro chopped

Instructions 

  1. 1. Cook the pasta according to package instructions. Drain and set aside.
  2. 2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  3. 3. Add the cumin, turmeric, and garam masala. Stir for a minute until fragrant.
  4. 4. Add the rinsed lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the lentils are tender.
  5. 5. Stir in the cooked pasta. Season with salt and black pepper to taste. Simmer for another 5 minutes to let the flavors meld together.
  6. 6. Garnish with chopped cilantro before serving.
