Dough
- 2 cups All-purpose flour
- ½ teaspoon Salt
- ½ cup Butter cold and diced
- ¼ cup Cold water
Filling
- 2 cups Spinach chopped
- 1 cup Cheese shredded
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 Egg beaten, for egg wash
Preheat the oven to 375°F (190°C).
In a mixing bowl, combine flour and salt. Add cold, diced butter and mix until crumbly. Gradually add cold water and mix until dough forms. Wrap in plastic and chill for 30 minutes.
In another bowl, mix spinach, cheese, cumin, and paprika. Set aside.
Roll out the dough on a floured surface. Cut into circles using a cookie cutter.
Place a spoonful of filling in the center of each circle. Fold and seal the edges with a fork.
Brush the empanadas with beaten egg. Place on a baking sheet and bake for 20 minutes or until golden brown.
