  • 2 cups Egg whites
  • 1 cup Spinach, chopped
  • 1 cup Mushrooms, sliced
  • ½ cup Onion, diced
  • ½ cup Bell pepper, diced
  • ¼ cup Low-fat cheese, shredded
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the egg whites, salt, and black pepper.
  3. Add the chopped spinach, sliced mushrooms, diced onion, and diced bell pepper to the egg mixture. Stir to combine.
  4. Pour the mixture into a greased baking dish. Sprinkle the shredded cheese on top.
  5. Bake in the preheated oven for 30 minutes, or until the casserole is set and the top is golden brown.
