Ingredients 

Main Ingredients

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold butter, cut into pieces
  • ½ cup dried currants
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the currants.
  5. In a separate bowl, mix together the heavy cream and vanilla extract.
  6. Add the wet ingredients to the dry ingredients and stir until just combined.
  7. Turn the dough out onto a floured surface and knead gently.
  8. Pat the dough into a circle about 1-inch thick and cut into 8 wedges.
  9. Place the wedges on a baking sheet and bake for 15 minutes or until golden brown.
