- 1 cup fresh spinach chopped
- 1 cup mushrooms sliced
- 1 cup cherry tomatoes halved
- 4 eggs beaten
- ½ cup milk
- ½ cup shredded cheese your choice
- ½ teaspoon salt
- ¼ teaspoon black pepper
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk together the eggs and milk.
Add the chopped spinach, sliced mushrooms, halved cherry tomatoes, shredded cheese, salt, and pepper to the egg mixture. Stir to combine.
Pour the mixture into a greased baking dish.
Bake in the preheated oven for 45 minutes, or until the quiche is set and golden brown on top.
Let it cool for a few minutes before slicing and serving.
