  • 1 cup mushrooms sliced
  • 1 cup cherry tomatoes halved
  • 4 eggs beaten
  • ½ cup milk
  • ½ cup shredded cheese your choice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs and milk.
  3. Add the chopped spinach, sliced mushrooms, halved cherry tomatoes, shredded cheese, salt, and pepper to the egg mixture. Stir to combine.
  4. Pour the mixture into a greased baking dish.
