Crustless Cottage Cheese Mini Quiches
These mini quiches are perfect for a quick breakfast or snack. They're crustless, making them low-carb and easy to prepare.

- 1 cup Cottage cheese
- 4 Eggs
- ½ cup Shredded cheese Cheddar or your choice
- ¼ cup Chopped spinach Optional
- ¼ teaspoon Salt
- ¼ teaspoon Black pepper
Preheat your oven to 375°F (190°C). Grease a muffin tin.
In a mixing bowl, whisk together the eggs, cottage cheese, shredded cheese, salt, and pepper.
Fold in the chopped spinach if using.
Pour the mixture evenly into the muffin tin cups.
Bake for 20 minutes or until the quiches are set and lightly golden.
Let them cool slightly before removing from the tin. Serve warm or at room temperature.
