  • 6 pieces Corn Tortillas
  • 4 large Eggs
  • 1 cup Milk
  • 1 cup Shredded Cheese
  • 1 cup Diced Vegetables (bell peppers, onions, etc.)
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Line a pie dish with the corn tortillas, overlapping them to cover the bottom and sides.
  3. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  4. Stir in the shredded cheese and diced vegetables.
  5. Pour the egg mixture into the tortilla-lined pie dish.
  6. Bake in the preheated oven for 30 minutes, or until the quiche is set and the top is golden brown.
  7. Let cool for a few minutes before slicing and serving.
