Ingredients 

Main Ingredients

  • 2 cups Cooked chicken, shredded
  • 1 cup Cheddar cheese, shredded
  • 1 cup Enchilada sauce
  • 8 pieces Tortillas
  • 1 cup Sour cream
  • 1 cup Onion, chopped
  • 1 tablespoon Olive oil

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until soft.
  3. In a mixing bowl, combine the shredded chicken, half of the cheese, and half of the enchilada sauce.
  4. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in a baking dish.
  5. Pour the remaining enchilada sauce over the top of the tortillas and sprinkle with the remaining cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Serve hot with sour cream on the side.
