Cheesy Chorizo Frittata

- 6 large eggs
- 1 cup chorizo, cooked and crumbled
- 1 cup shredded cheese (cheddar or your choice)
- ¼ cup milk
- 1 small onion, diced
- 1 tablespoon olive oil
- to taste salt and pepper
1. Preheat your oven to 375°F (190°C).
2. In a skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened.
3. Add the cooked chorizo to the skillet and mix well with the onions.
4. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
5. Pour the egg mixture over the chorizo and onions in the skillet. Sprinkle the shredded cheese on top.
6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and the cheese is melted and bubbly.
7. Remove from the oven and let it cool slightly before slicing and serving.
