Cheesy Amish Breakfast Casserole Recipe

- 1 pound Bacon diced
- 1 cup Onion chopped
- 6 Eggs beaten
- 4 cups Hash brown potatoes shredded
- 2 cups Cheddar cheese shredded
- 1 ½ cups Cottage cheese
- 1 ¼ cups Swiss cheese shredded
Preheat oven to 350°F (175°C).
In a large skillet, cook bacon and onion over medium heat until bacon is crisp. Drain and set aside.
In a large bowl, combine the remaining ingredients. Stir in bacon mixture.
Transfer to a greased 9x13 inch baking dish.
Bake, uncovered, for 35-40 minutes or until a knife inserted near the center comes out clean.
Let stand for 10 minutes before cutting.
