Ingredients

  • 1 pound Bacon diced
  • 1 cup Onion chopped
  • 6 Eggs beaten
  • 4 cups Hash brown potatoes shredded
  • 2 cups Cheddar cheese shredded
  • 1 ½ cups Cottage cheese
  • 1 ¼ cups Swiss cheese shredded

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook bacon and onion over medium heat until bacon is crisp. Drain and set aside.
  3. In a large bowl, combine the remaining ingredients. Stir in bacon mixture.
  4. Transfer to a greased 9x13 inch baking dish.
  5. Bake, uncovered, for 35-40 minutes or until a knife inserted near the center comes out clean.
  6. Let stand for 10 minutes before cutting.
