  • 1 cup Oatmeal
  • 1 cup Buttermilk
  • 1 cup Raisins
  • 1 cup All-purpose flour
  • ½ cup Brown sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 large Egg
  • ¼ cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper liners.
  2. In a bowl, combine the oatmeal and buttermilk. Let it sit for 10 minutes.
  3. In another bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
  4. Add the egg, vegetable oil, and vanilla extract to the oatmeal mixture. Mix well.
  5. Combine the wet and dry ingredients, then fold in the raisins.
  6. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
