Ingredients

  • 1 cup Instant oatmeal
  • 1 cup Flour
  • ½ cup Brown sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Salt
  • 1 Egg
  • 1 cup Milk
  • ¼ cup Vegetable oil

Instructions 

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the instant oatmeal, flour, brown sugar, baking powder, and salt.
  3. In another bowl, beat the egg, then add the milk and vegetable oil. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
