Ingredients

  • 2 cups Broccoli florets
  • 2 medium Potatoes, peeled and diced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Vegetable broth
  • 1 cup Milk
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until soft.
  2. 2. Add the potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  3. 3. Add the broccoli and cook for another 5 minutes.
  4. 4. Use a blender to puree the soup until smooth. Return to the pot.
  5. 5. Stir in the milk and season with salt and pepper to taste. Heat through but do not boil.
