Main Ingredients
- 2 medium sweet potatoes peeled and cubed
- 1 tablespoon olive oil
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup
- 1 pinch salt
Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes with olive oil and spread them on a baking sheet.
Roast for 20 minutes or until tender.
Let the sweet potatoes cool slightly, then transfer them to a blender.
Add cinnamon, vanilla extract, maple syrup, and a pinch of salt. Blend until smooth.
Serve warm or chilled with your favorite dippers.
