Ingredients

  • 4 Poblano Peppers
  • 1 cup Cooked Breakfast Sausage crumbled
  • 1 cup Shredded Cheddar Cheese
  • 4 Eggs beaten
  • ¼ cup Chopped Onion
  • ¼ cup Chopped Tomato
  • ¼ cup Chopped Cilantro
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the poblano peppers in half lengthwise and remove the seeds.
  3. Place the peppers on a baking sheet and bake for 10 minutes to soften.
  4. In a mixing bowl, combine the cooked sausage, cheese, eggs, onion, tomato, cilantro, salt, and pepper.
  5. Remove the peppers from the oven and fill them with the sausage mixture.
  6. Return the stuffed peppers to the oven and bake for another 15 minutes, or until the eggs are set.
  7. Serve hot and enjoy!
