Ingredients

  • 2 large flour tortillas
  • 4 large eggs beaten
  • ½ cup shredded cheese cheddar or your choice
  • ¼ cup diced bell peppers
  • ¼ cup diced onions
  • 1 tablespoon butter
  • to taste salt and pepper

Instructions 

  1. 1. Heat the skillet over medium heat and melt the butter.
  2. 2. Add the diced onions and bell peppers, cook until softened.
  3. 3. Pour in the beaten eggs, season with salt and pepper, and scramble until cooked through.
  4. 4. Remove the eggs and veggies from the skillet and set aside.
  5. 5. Place a tortilla in the skillet, sprinkle half of the cheese on one side, add the scrambled eggs and veggies, then top with the remaining cheese.
  6. 6. Fold the tortilla in half and cook until golden brown on both sides.
  7. 7. Repeat with the second tortilla. Serve hot.
