Ingredients

  • 1 cup Arborio rice
  • 2 cups Chicken broth
  • 1 cup Diced tomatoes
  • 1 cup Chopped bell peppers
  • 1 cup Frozen peas
  • 4 Large eggs
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. Heat the large skillet over medium heat.
  2. 2. Add the Arborio rice and toast for 2-3 minutes.
  3. 3. Pour in the chicken broth and bring to a simmer.
  4. 4. Add the diced tomatoes, bell peppers, and peas. Stir well.
  5. 5. Season with paprika, salt, and black pepper.
  6. 6. Make four wells in the mixture and crack an egg into each well.
  7. 7. Cover the skillet and cook until the eggs are set, about 10 minutes.
  8. 8. Serve hot and enjoy your breakfast paella!
