Ingredients 

Main Ingredients

  • 1 cup wheat bran
  • 1 cup applesauce
  • 1 cup milk
  • 1 large egg
  • ½ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions 

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, mix the wheat bran and milk. Let it sit for 10 minutes.
  3. Add the applesauce, egg, brown sugar, and vanilla extract to the bran mixture. Stir well.
  4. In another bowl, whisk together the whole wheat flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
