Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs, sour cream, sugar, vanilla extract, and melted butter until smooth.
  3. Arrange the blintzes in a single layer in a greased baking dish.
  4. Pour the egg mixture over the blintzes, making sure they are well-coated.
  5. Bake in the preheated oven for 45 minutes, or until the top is golden brown and the souffle is set.
